Night-before checklist for hood cleaning
A few minutes of prep lets the crew start on time and finish before your morning shift.
Before we arrive
- Turn off all cooking equipment under the hood and let it cool. We confirm the stop time when we book.
- Clear food, pans, utensils and small items off the line and nearby shelves.
- Cover or put away open food and anything that shouldn't get wet.
- Make sure the roof can be reached: hatch unlocked, ladder available, or building manager told.
- Leave a place for the crew to park close to the kitchen door.
- Arrange access if no one will be on site: key, lockbox or security contact.
Tell us ahead of time
- Your closing time and when prep starts again
- Building rules for after-hours work, noise or roof access
- Any equipment problems, gas pilot lights, or anything fragile near the line
The morning after
