Grease filter care between cleanings
Filters catch grease before it reaches the duct. A little care between professional visits keeps them doing their job.
How often to clean filters
It depends on how much you cook. Busy fryer, grill and wok lines may need filters cleaned every few days. Lighter kitchens can often go a week or two. If grease is dripping or the hood isn't pulling smoke well, the filters are overdue.
Cleaning them in-house
- Let the hood cool and remove the filters carefully.
- Soak them in hot water with a degreaser made for commercial kitchens.
- Scrub, rinse and let them dry fully.
- Put them back with the baffles running up and down so grease drains into the trough.
Do's and don'ts
- Never run the hood with filters missing. Grease goes straight into the duct.
- Replace bent or warped filters. Gaps let grease bypass the filter.
- Empty the grease cup or trough regularly.
- Don't use mesh filters as grease filters. NFPA 96 does not allow them.
